Responsible for all food and beverage services and financial performance. This includes hiring and scheduling of staff, ordering of product, inventory tracking, cost analysis and ensuring the overall financial success of the department. Directly supervises Executive Chef and all service staff. The F&B Manager is also responsible for all private and public functions, and must assure that the wants and needs of members and guests are consistently exceeded.
Duties & Responsibilities:
Manage all F&B and day-to-day operations within budgeted guidelines and to the highest standards
Preserve excellent levels of internal and external customer service
Design menus, purchase goods and continuously make necessary improvements
Establish targets, KPIs, schedules, policies and procedures
Comply with all health and safety regulations
Report on management regarding sales results and productivity
Maintain stock to prevent spoilage and reduce overhead, while serving customer needs
Provide the board of directors with reports on the financial status of the department
Promote and support internal and external events.
Manage the Special Event menus to insure pricing of service is creating positive revenue.
Assist with setup and serving to members, clients and events as required.
Schedule events to best utilize the entire facility, with minimal effect on the members.
Research the local market and design programs and events to suit the needs of clients.
Ensure accuracy in accounts re: incorrect charges on member statements reversed.
Ensure accuracy in annual/monthly fee billing based on member requests, making further changes to member accounts based on late requests, applying/refunding pro-rated fees at the GMs discretion, ensuring fees balance with the accountant's GL.
